Air Fried Veggie Chips

Description

Make delicious air fried veggie chips with sweet potato, zucchini, and carrots. This easy snack is perfect for solo munching—your air fryer does all the work!


Ingredients

  • 1 sweet potato
  • 2 zucchinis
  • 3 large carrots
  • 24 tbsp olive oil
  • Kosher salt or Sea Salt
  • Pepper
  • Garlic Powder

Instructions

  • Thinly slice the sweet potato, zucchini and carrots using a mandoline or sharp knife.
  • Place the sweet potato in the bottom of an air fryer in an even layer.
  • Drizzle with olive oil and toss with kosher salt and pepper.
  • Air fry at 320° for 10-15 minutes, depending on your air fryer. Be sure to check half way through to make sure they aren’t burning. Remove from the air fryer and set aside.
  • Next, add in the zucchini and carrots, tossing again with olive oil, kosher salt and pepper.
  • Air fry for 20-30 minutes. Again checking to ensure they aren’t burning.

Notes

Note: Depending on the size of your air fryer, you will need to do this in batches. Be sure to check on the vegetables throughout the cooking process to ensure nothing is burning. Be sure to remove any cooked pieces and allow the remaining to cook through.
