Description

Our low carb fried pickles put a healthy-ish twist on our favorite version of the salty snack. This simple recipe uses easy-to-find ingredients and comes together in about 20 minutes.


Ingredients

  • 1 cup Dill Pickle Slices
  • 1/2 cup Pork Rinds (ground)
  • 1 large Egg
  • 1/2 teaspoon Garlic Powder
  • 1/4 teaspoon Ground Black Pepper
  • 1/2 teaspoon Paprika
  • 1 1/2 tablespoons Coconut Flour
  • Cooking Spray (with no propellents)
  • Ranch for dipping or your favorite sauce (optional)
  • Dried Parsley (for garnish)

Instructions

  1. Preheat the air fryer to 400 degrees fahrenheit.
  2. Add pork rinds to a large ziploc bag and use a rolling pin to crush them or another object with some weight.
  3. Pour the pork rind mixture into a small bowl. Mix in paprika, garlic powder and ground black pepper.
  4. Using a paper towel, pat the pickle slices dry and add to a large bowl.
  5. Add the coconut flour mixture and mix to evenly coat pickles.
  6. Whisk the egg in the second bowl.
  7. Using tongs, dredge the coated pickles in the egg mixture in batches.
    Allow the excess to drip off and press into the pork rind mixture.
  8. Transfer to a plate and repeat until all of the pickles have been coated.
  9. Spray non-stick cooking spray on cooking trays or air fryer basket.
  10. Arrange the pickles in a single layer. Air frying for 10-12 minutes.
  11. Serve your very crispy fried pickle snack immediately with your favorite dipping sauce! Ranch is a great option! Sprinkle some dried parsley on your dipping sauce as garnish and enjoy!

Notes

  • Depending on the size of your air fryer: You may need to work in small batches.
  • If your air fryer is large enough you can lay all of the pieces down on your tray or basket at once spread out evenly.
