A copycat of the Chicken Salad Chick classic. Creamy, loaded with bacon and cheddar, and just tangy enough from the ranch. Great on a croissant, with crackers, or straight from the bowl.

Ingredients

  • 3 cups cooked chicken, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 3/4 cup mayonnaise
  • 1 tablespoon ranch seasoning mix
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice

Instructions

  1. Add the finely chopped cooked chicken, bacon and cheese to a large mixing bowl.
  2. Season the chicken with the salt, pepper, and garlic powder. Stir to evenly coat the chicken with the seasonings.
  3. Add the mayonnaise, ranch seasoning mix, Dijon mustard, and lemon juice to the bowl.
  4. Stir everything together until the chicken is fully coated in the creamy dressing and well combined.
  5. Gently stir until the cheese and bacon are evenly distributed throughout the chicken salad.
  6. Cover and refrigerate for at least 1 hour to allow the flavors to blend and develop.
  7. Stir again before serving and adjust seasoning if needed.

Notes

  • Finely chopping the chicken gives the best texture for chicken salad.
  • Chill time is important for the best flavor.
  • Use rotisserie chicken for an easy shortcut.
  • Add a little extra mayo if you prefer a creamier texture.
