Small Batch Banana Bread

This small batch banana bread makes one loaf using those ripe, spotty bananas on your counter. It comes together in one bowl with no stand mixer needed, and you’ll have a fresh loaf ready in about an hour.

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1/2 stick of butter, softened
  • 2 eggs, beaten
  • 23 small bananas, mashed
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350 degrees.
  2. In the bowl combine sugar and butter.
  3. Mix until light and fluffy.
  4. Add eggs, salt, and vanilla.
  5. Mix on low speed.
  6. Add bananas and mix on medium speed until incorporated.
  7. Add baking powder, soda, and flour.
  8. Mix well, scraping sides of bowl.
  9. Pour batter into greased bread pan.
  10. Bake on 350 degrees for 1 hour.
  11. Remove from oven.
  12. Let cool for 5 minutes and then turn out onto a cooling rack to cool completely.
