Ingredients
- 1 cup/235ml coconut milk (full-fat)
- 4 tbsp/20g cocoa powder
- 2 tbsp/16g cornstarch
- 3 tbsp/38g granulated sugar
- 1/2 tsp/3ml vanilla extract
Instructions
- In a saucepan over medium-low heat, combine the coconut milk and vanilla. Bring the liquid to just warm, swirling occasionally.
- In a medium bowl, combine the cocoa powder, corn starch, and sugar. Whisk until evenly distributed with no lumps.
- Add some warm coconut milk (from the stove) to the dry ingredients. Whisk until a smooth slurry forms.
- Scrape the slurry back into the pot with the rest of the milk and stir. Return to medium-low heat and stir. Do this until the mixture thickens a lot. This takes a couple of minutes, about 5 minutes.
- Put the pudding into individual serving dishes or an airtight container. Cover it with plastic wrap or a lid. Then, chill it in the fridge for at least 1 hour.
- Serve with your favorite toppings. These could include fresh fruit, chopped nuts, chocolate shavings, and whip cream. Also try semisweet chocolate chips, coconut flakes, or a sprinkle of flaky sea salt. This pudding also tastes great the next day. If stored right, it’s perfect for any chocolate cravings.
