Description

Make an easy, rich chocolate pudding for two with pantry staples. This simple dessert recipe is perfect for chocolate lovers, offering incredible taste without any waste.


Ingredients

  • 1 cup/235ml coconut milk (full-fat)
  • 4 tbsp/20g cocoa powder
  • 2 tbsp/16g cornstarch
  • 3 tbsp/38g granulated sugar
  • 1/2 tsp/3ml vanilla extract

Instructions

  1. In a saucepan over medium-low heat, combine the coconut milk and vanilla. Bring the liquid to just warm, swirling occasionally.
  2. In a medium bowl, combine the cocoa powder, corn starch, and sugar. Whisk until evenly distributed with no lumps.
  3. Add some warm coconut milk (from the stove) to the dry ingredients. Whisk until a smooth slurry forms.
  4. Scrape the slurry back into the pot with the rest of the milk and stir. Return to medium-low heat and stir. Do this until the mixture thickens a lot. This takes a couple of minutes, about 5 minutes.
  5. Put the pudding into individual serving dishes or an airtight container. Cover it with plastic wrap or a lid. Then, chill it in the fridge for at least 1 hour.
  6. Serve with your favorite toppings. These could include fresh fruit, chopped nuts, chocolate shavings, and whip cream. Also try semisweet chocolate chips, coconut flakes, or a sprinkle of flaky sea salt. This pudding also tastes great the next day. If stored right, it’s perfect for any chocolate cravings.
