These Granola Breakfast Cups are a perfect make-ahead option for busy mornings. They combine crunchy granola with creamy yogurt and fresh berries, creating a delicious and healthy grab-and-go breakfast or snack.
Ingredients
- 1 1/2 cups rolled oats
- 1 banana
- 1 cup greek yogurt (or yogurt of your choice)
- 1/2 teaspoon vanilla extract
- 1/4 cup raw honey
- Strawberries, for serving
- Blueberries, for serving
Instructions
- Mash the Banana: In a medium bowl, mash the banana until smooth.
- Mix Ingredients: Add rolled oats and raw honey to the mashed banana. Mix until well combined.
- Form Cups: Divide the mixture into a muffin pan, pressing it firmly to the edges and bottom to create a cup shape.
- Freeze: Place the muffin pan in the freezer for 30 minutes to help the cups hold their shape.
- Bake: Preheat your oven to 350°F (175°C). Bake the granola cups for 30 minutes until golden and firm. Let them cool for 10 minutes after baking.
- Assemble: Once the cups are cool, fill each with a dollop of yogurt and top with fresh strawberries and blueberries.
- Serve: Enjoy immediately or store for later use.
Notes
These do not need to be reheated. They are best enjoyed cold or at room tempature.
