Vegan Pancakes for One

Fluffy, golden vegan pancakes made for one person with just a handful of pantry staples. One bowl, no eggs, no dairy, and ready in under 30 minutes.

Ingredients

  • 3/4 cup self-rising flour
  • 1/3 cup barista oat milk (thicker milk works better)
  • 1/2 tablespoon olive oil
  • 1/2 tablespoon cane sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 tablespoon baking powder
  • Olive Oil Spray for Cooking
  • 2 tablespoons maple syrup

Instructions

  1. In a medium-sized bowl mix all dry ingredients: ¾ cup flour, ½ tablespoon baking powder and ⅓ tablespoon cane sugar.
  2. In the same bowl pour in ¾ cup oat milk, ½ tablespoon olive oil, and ½ teaspoon vanilla extract.
  3. Mix the wet and dry ingredients for about 2-3 minutes until fully incorporated. 
  4. Drizzle olive oil or use spray oil into a large non-stick frying pan and pour in batter to make 3 medium-sized pancakes, about 4 inches in diameter. 
  5. Cook each pancake for about 2-3 min until tiny bubbles start to form.
  6. Flip over and cook for another minute until golden brown on the reverse side.
  7. Serve warm with vegan butter, pure maple syrup, and add your favorite fruit on top. Enjoy!

Notes

  • Make sure your baking powder is not expired
  • Do not overmix the batter! Some lumps are okay!
