Flour: This recipe calls for regular all-purpose flour to make it easy.

Almond Milk: We are using almond milk as our dairy substitute in this recipe due to the taste and texture.

Pumpkin Puree: You’ll need a can of pumpkin puree for this recipe. Make sure you have pumpkin puree and not pumpkin pie filling for this ingredient!

Avocado Oil: We will be using avocado oil for this recipe since its a neutral tasting oil.

Pumpkin Pie Spice: One of the stars of the show is Pumpkin Pie Spice! Make sure you have this for that cozy fall flavor.

Spray Oil: Select an oil that is just oil with no propellents.

Substitutions 

Milk: You can use other non-dairy milks you have on hand such as Oat Milk or Cashew Milk. For best results I think the Almond Milk cooks the best in these waffles.

Oat Flour or Gluten Free Flour: You can sub the Oat Flour or Gluten-Free Flour for All-Purpose Flour if you need this recipe to also be gluten-free.

Storage

For any leftover ingredients you’ll need to store them for another recipe or the next time you’d like to make these pumpkin spice waffles for one.

Pumpkin Puree: This usually comes in a 15 oz. can. I suggest freezing the remainder of the pumpkin the tablespoon size souper cubes to use in another recipe that calls for pumpkin.

Almond Milk: Almond milk bought from the refrigerated section of the grocery store will last in your fridge for about 7-10 days. It can last longer depending on the brand, preservatives added, and storage conditions. Shelf-stable almond milk will last one to two months in your pantry (unopened) and up to 10 days in the fridge after opening.

Flour: Flour will store for at least 6-8 months up to 1 year in an airtight container in a cool dry pantry or cabinet. 

How to make Vegan Pumpkin Waffles for One (Or Two)

In a medium size bowl add the pumpkin puree, almond milk, avocado oil and sugar. Whisk until well combined.

Add the dry ingredients: flour, baking powder, baking soda, salt, and cinnamon to the same bowl and whisk until well combined and smooth.

Heat your waffle iron to medium-high heat and spray with non-stick spray.

Add about 1/2 cup batter to the iron. Let it cook for about 3-4 minutes.

Repeat once more with batter until you have both sets of waffles.
