Description
This Dorito beef taco salad for one comes together in 20 minutes with seasoned beef, crunchy chips, and fresh toppings. Easy, nostalgic, and sized for one.
Ingredients
- 5–6 oz ground beef
- 1–2 tablespoon taco seasoning
- 1 tablespoon water
- 1 small bag of Nacho Cheese Doritos, lightly crushed
- 1/2 cup shredded mild cheddar cheese
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn, rinsed and drained
- 1 cup chopped romaine lettuce
- 1/2 cup cherry tomatoes, halved
- 1–2 tablespoons catalina dressing dressing
- Optional toppings: sour cream, salsa, and guacamole
Instructions
- Heat a skillet over medium-high heat.
- Add the ground beef and cook, breaking it apart, until browned (about 5–7 minutes).
- Drain any excess grease.
- Stir in taco seasoning and water. Mix well and simmer for 1–2 minutes.
- Add your lettuce, tomatoes, corn, beans and cheese to the bowl in layers.
- Add the catalina dressing.
- Add the seasoned beef.
- Add crushed Doritos to the top of the bowl.
- Add any toppings you like and serve right away so the chips stay crisp.

If you’re cooking from a 1 lb pack of ground beef, cook the whole thing and save half for tacos, nachos, or a quesadilla later in the week.
