Fruit nachos can be served as a snack or dessert, either alone or as part of a larger meal. The toppings can also be customized to suit individual tastes, with a variety of fruits, nuts, and other sweet treats available to choose from. Ingredients you need to make Fruit Nachos for One

Ingredients

All you need to make fruit nachos are a few ingredients. They are:

  • Carb Balance Flour Tortillas
  • Butter, melted
  • Cooking Spray (use avocado oil spray or olive oil spray with no propellants)
  • Granulated Sugar
  • Cinnamon
  • Strawberries, sliced
  • Blueberries
  • Kiwi, diced
  • Mango, diced
  • Pistachios, chopped
  • Light Vanilla Ice Cream and/or Light Whipped Cream

Ingredient Notes

Carb Balance Tacos:

In this recipe, I’m using a low carb flour tortilla  instead of a regular tortilla. This is primarily for the high fiber amount in these tortillas. I like the Mission brand for texture and taste but you can use a comparable brand.

Spray Cooking Oil:

Look for the version that only has one ingredient and no propellants. For this recipe, I’m using avocado spray oil because it can bake or air fry at a higher temperature. The taste is also neutral which works well for this dessert recipe.

Sugar:

I’m using regular cane sugar in this recipe as a taste preference. You can substitute for a sugar alternative like Monk Fruit to keep these low carb.

Different Fruits:

Since this recipe was developed during the summer I’m using all of my favorite summer fruits such as mango, kiwi, strawberries, and blueberries. If you are making this recipe when these fruits are out of season simply sub in your favorite fruit to this recipe.

Tortillas:

If you aren’t a fan of low carb tortillas you can also substitute these for a regular tortilla. Just make sure they are the small or taco size tortillas for these fruit nachos.

Spray Oil:

In this recipe I’m using avocado oil but spray olive oil (without the propellants) or canola oil can also be used instead.

Sugar:

Looking for a lower-sugar dessert? Swap the sugar in this recipe for Truvia granulated sugar or monk fruit sweetener as a great low carb option.

Different Fruits:

Not a fan of tropical fruit? Swap out the fruits for any of your favorites instead or use what’s in season.

How to make Fruit Nachos – Oven Instructions

Step 1: Preheat your oven or air fryer

If you are using an oven preheat your oven to 375 degrees Fahrenheit.

Step 2: Prep your cookie sheet or air fryer

Line a cookie sheet or sheet pan with parchment paper or foil (for easy clean-up) for oven baking.

Step 3: Prep your butter

Melt your butter in your microwave or in a small saucepan on the stovetop.

Step 4: Combine sugar and cinnamon

In a small bowl combine sugar and cinnamon together with a spoon.

Step 5: Prep your tortillas

Lay the tortilla on a cutting board and brush the unbaked tortilla with the melted butter on one side, then sprinkle the cinnamon sugar mixture on top.

Step 6: Cut your tortillas into nacho shapes

Use a knife or pizza cutter to cut the tortilla into 6 pieces.

How to make Fruit Nachos – Air Fryer Instructions

If you are using an air fryer use lay a small piece of parchment paper on a cutting board to prep your fruit nachos.

Step 2: Prep your butter

Melt your butter in your microwave or in a small saucepan on the stovetop.

Step 3: Combine sugar and cinnamon

In a small bowl combine sugar and cinnamon together with a spoon.

Step 4: Prep your tortillas

Lay the tortilla on a cutting board and brush the unbaked tortilla with the melted butter on one side, then sprinkle the cinnamon sugar mixture on top.

Storage options for Fruit Nachos for One

This is a single-serving recipe so you shouldn’t have any leftovers. However, these fruit nachos are easy to pre-make if you want to make a small batch instead of a single-serving dessert to have for later. Simply store the extras in an airtight container on the counter at room temperature. These will last for up to 4 days at room temperature.

You can also put this dessert nacho recipe in the fridge and they will still hold their crunch when reheated.

If you have any left over fruit you will also want to store that in an air tight container in the fridge for another recipe or snack for the week. You can also pre-cut all of the fruit for this recipe and save it in the containers. That way you’ll only need to make the tortilla each time you want to have this for a dessert.

  • 4 tablespoons granulated sugar
  • 2 tablespoons cinnamon
  • 1/2 cup strawberries, sliced
  • 1/3 cup blueberries
  • 1/3 cup kiwi, diced (about half a kiwi)
  • 1/2 cup mango, diced (about half a mango)
  • 1/8 cup pistachios, chopped
  • 1 scoop of light vanilla ice cream and/or light whipped cream
  • Cooking Spray (use avocado oil spray or olive oil spray)

Instructions

OVEN INSTRUCTIONS:

  1. Preheat the oven to 375 F
  2. Line a sheet pan with parchment paper or foil.
  3. Next, melt your butter. You can complete this step in the microwave or you can melt it in a small saucepan on the stovetop.
  4. In a small bowl, combine the granulated sugar and cinnamon with a spoon.
  5. Put your tortilla on a cutting board.
  6. Brush the tortillas with the melted butter on one side, then sprinkle the cinnamon sugar mixture on top of each. Shake off an excess that doesn’t stick.
  7. Use a knife or a pizza cutter to cut the tortilla into 6 pieces. 
  8. Put the tortilla chip pieces onto the lined baking sheet and bake for about 10-12 minutes.
  9. About half way through you’ll want to shake the tray and spray with some cooking oil spray if they seem dry.
  10. Prepare your fruit and nuts by chopping them into bite sized pieces.
  11. Once the chips have finished baking and have cooled, arrange them on a plate.
  12. Add your fresh fruit, pistachios, and light ice cream or light whipped cream
  13. Eat and enjoy this sweet treat!

AIR FRYER INSTRUCTIONS:

  1. Preheat your air fryer to 375 F
  2. Next, melt your butter. You can complete this step in the microwave.
  3. In another small bowl, combine the granulated sugar and cinnamon.
  4. Add your tortilla to a cutting board with a piece of parchment paper on your working space.
  5. Brush the tortillas with the melted butter on one side, then sprinkle the cinnamon sugar mixture on top of each. Shake off the extra.
  6. Use a knife or a pizza cutter to cut the tortilla into 6 pieces. 
  7. Transfer your small parchment paper sheet with the flour tortilla chip pieces into your air fryer and cook for 8 minutes. If using 2 tortillas just make sure to spread them out and do not overcrowd the bin. You will need to shake the air fryer tray about halfway through and possibly spray with the cooking spray to make them extra crisp while air frying.
  8. Air fry on 375 for about 8 minutes.
  9. Prepare your fruit and nuts by chopping them into bite sized pieces.
  10. Once the tortilla chips have finished baking, arrange them onto your serving plate. 
  11. Add your fresh fruit, pistachios, and ice cream or whipped cream
  12. Eat and enjoy this sweet treat!

Notes

  • Use the cooking spray to spray the tortilla after the butter has been applied to use in the air fryer to make sure they crisp up
